Prices for borsch ingredients fell by half — the consumer wins

In 2025, Ukraine is not experiencing a shortage of vegetables — on the contrary, the harvest exceeded last year’s figures, which led to a significant decrease in prices.

According to Taras Vysotskyi, Deputy Minister of Economy, Environment, and Agriculture, the basic components of the borscht set — potatoes, onions, cabbage, beets, and carrots — have become significantly more affordable.

“We are currently seeing prices — in some positions they are half the price they were last year. The harvest is better, and negative factors had less influence,” Vysotskyi commented to LIGA.net.

According to official data, potato production in 2025 amounts to 18 million tons. At the same time, the expert assessment of the real market is about 10 million tons, taking into account losses, seed material, and fodder use.

“This year for potato producers is probably not the best, but for consumers, it is certainly affordable — and this applies to the entire vegetable group as well,” added Vysotskyi.
